Popsicles



Ditch store bought popsicles with a ton of sugar and make your own! Whether you crave something savory or sweet, there are a bunch of different recipes you can create with amazing flavor combinations. Lauren loves anything lavender and Claire is on a huge mint kick. Below are two mouth watering popsicles recipes that will hit the spot on any hot summer day.




Honey Lavender Peach Popsicles (makes 6 popsicles)
3 ripe peaches
1 cup water
1 cup honey
3 tablespoons dried lavender flowers

To make popsicles //
Peel and core two peaches and chop in to small pieces. Combine peaches with 1 cup of honey lavender simple syrup in a food processor (or blender) and puree until the mixture is smooth. Rinse and thinly slice the remaining peach. Add a peach slice or two to each popsicle mold before you pour in the mixture. Freeze and serve.

To make honey lavender simple syrup //
In a small saucepan, combine 1 cup water, 1 cup honey, and three tablespoons dried lavender flowers. Heat over medium heat until water and honey are well combined, but do not boil. Strain out lavender flowers and allow mixture to cool.



Cucumber Lime Mint (makes 6 popsicles)
1 cucumber
1 cup fresh squeezed lime juice (4-6 limes)
1 cup water
1 cup honey
Fresh Mint

To make popsicles //
Peel cucumber and chop in to small pieces. Combine cucumber, lime juice and mint-infused simple syrup in a food processor (or blender) and puree until the mixture is smooth. Add a fresh mint leaf or two to each popsicle mold before you pour in the mixture. Freeze and serve.

To make simple syrup //
In a small saucepan, combine 1 cup water, 1 cup sugar (or honey), and 1 cup chopped fresh mint leaves. Bring to a boil. Cook, stirring occasionally, until the sugar dissolves. Strain out the mint leaves and allow mixture to cool.
